"THE WAY OF FOOD" – RECIPES

Oush Pillau
Rice, Carrot and Lamb Dish


Ingredients:

3 large onions, chopped
1/2 a cup oil
1 Kilo Lamb, cut into large cubes
5 Carrots, peeled and sliced into thin “matches”
2 tsp. whole Cumin seeds
1/2 cup white raisins
2 tsp. Freshly groundBlack Pepper
2 Tbsp. Salt
2 Whole Heads of Garlic
3 cups Rice

Preparation:

1. Rinse rice, strain and soak in cold water for at least one hour.
2. Sauté onion in the oil until brown. Add meat and continue to sauté until brown. Add a handful of carrots and half a cup of water and bring to a boil. Cover and cook on low flame foe one half an hour.
3. Add, spreading evenly, the rest of the carrots. Sprinkle the raisins, cumin and pepper on top and add the garlic heads.
4. Add to the pot the rice. Add water to cover the rice. Form 5-6 “holes” in the rice and bring to a boil. Cover tightly and simmer for one hour.


Presentation:

Place the rice on large platter and arrange on top the meat and carrots. On top of the heap place the garlic heads. Serve immediately.


Tomato and Cilantro Salad
Simple and delicious


Ingredients:

1 kilo Tomatoes
1 cup fresh, finely chopped, Cilantro
4 scallions, thinly chopped
Salt, freshly ground black pepper
1/2 cup fresh squeezed lemon juice

Preparation:

Mix all ingredients and serve immediately.


Gush Jija
Baked Meat Ravioli


Ingredients for the dough:

1/2 Kilo sifted flour
20 Grams fresh Yeast
1/3 cup Oil
2 Tsp. Salt
Water

Filling:

1/2 Kilo finely ground Lamb
2 finely chopped Onions
2 Tsp. Salt
Freshly ground Black Pepper
2 Tsp. Whole Cumin seeds
1 lightly beaten Egg
some black Seasame seeds

Preparation of dough:

In a bowl mix the Flour, Yeast, Salt and Oil. Add a little water and blend with a spoon. Knead until a smooth and flexible dough is formed. Cover with Seran Wrap and let rest for one hour.

Filling:

1. Place the chopped Onion in a collander and add Salt. Mix and let sweat for half an hour. Squeeze out liquid and add to the ground Lamb, Black Pepper and Cumin.
2. Roll dough into thin sheet and cut out circles of 10 sentimeters in diameter. Place a large spoonful of filling in the center of each circle and pinch the edges over the filling.
3. Place the Raviolis in an oiled baking tray with the smooth side up. Brush the Raviolis with the beaten Egg and sprinkle with the seasame seeds.
4. Bake in a 180 degree oven for 30 minutes, until brown.

Serve hot with the Tomato and Cilantro Salad.
